Premier Pasta Salad Recipe

The salad:

  • 1 lb. Gemelli (corkscrew) pasta
  • 2 red peppers, cut in thin strips
  • 2 yellow peppers, cut in thin strips
  • Non-stick cooking spray
  • Salt and pepper to taste

The dressing:

  • 1/2 c. ketchup
  • 2/3 c. mayonnaise
  • 2 cloves garlic, crushed
  • 2 tbsp. oil
  • 1/4 c. vinegar
  • 1 tbsp. brown sugar
  • 2 tbsp. dried basil
  • 1 tsp. salt
  • black pepper to taste
  • 1 tsp. balsamic vinegar

Cook pasta al dente; drain and set aside.  Place peppers on lined baking sheet, spritz with oil spray, and season with salt and pepper.  Roast on 475 degrees Fahrenheit for 20 minutes.
Whisk dressing ingredients together and toss with pasta and peppers in large serving bowl.
Refrigerate up to 5 days.
